Harvesting
Manual, at the end of September/beginning of October.
Vinification
Destemming and traditional whole grape fermentation for 12-15 days.
Racking and soft crushing (not over 1.3 bar) for a most delicate extraction of
aromas and structure.
Refinement
3-month-ripening natural fermentation.
At least 12-month-storage in concrete tanks to guarantee the stability of the body
of the wine.
To be stored in bottle for at least 3 months.
No strict clarification filtrations.
No new barriques or wood chips for tanning.

Fragrance
Hints of red fruits and jams. Intense in its extreme bonding with grapes.
Flavour
Full-bodied yet not tanning, dynamic but persistent and delicate.
Its structure is not excessive, extremely well-balanced in the olfactory and tasting
sensations.
Alcohol by Volume
12.5% intense.
