Pastificio Cardone

The “Pastificio Cardone” is founded in 2002 by the brothers Luigi and Vincenzo Cardone. From the beginning they tried to value the local produces having a deep knowledge of the history and the gastronomical culture of region of Puglia. The pasta production was launched aside a laboratory existing since 1987 which was already using high quality wheat from local farmers. The aim was clear: handcraft pasta which together with olive oil and wine would represent the great tradition and heritage of Puglia’s gastronomy. In 2009 they started experimenting with a forgotten wheat variety: the famous Senatore Cappelli. This variety was created by the scientist Nazareno Strampelli in 1923 whose aim through his studies and research was to have a wheat with high nutritional value, specifically made for pasta processes. At his point the “Pastificio Cardone” starts to produce and commercialize its black line “Linea Nera Senatore Cappelli”. This new line of production incentives some local farmers to start producing this forgotten variety but with the great nutritional properties. Up to date there are 16 farms (all BIO certified) which are working with the Pastificio Cardone which guarantees the transformation into pasta according the highest standards: controlling the processes and selecting only the highest quality grains.
The grains are initially processed in stone powered mills in the area of growing. Afterwards are transferred in the production site of Via Sant’Oronzo di Fasano (Brindisi) where grains became pasta. Besides the BIO certification the Cardone has acquired the certification “Prodotto Qualità Puglia™, Quality product of Puglia”which only few companies has obtained and which certifies the development and production using local produce according the philosophy and cultural heritage of the Puglia gastronomic traditions.
Some of the pasta product are the symbols of Puglia in the world: Orecchiette, Strascinate, Cavatelli, Maccheroncini al Ferretto.
